The obligation
Operators must ensure the design, construction and location of the place of food business enable food to be safe and suitable.
This includes identifying and managing risks to food linked to the location, such as previous uses of the site or nearby activities that could contaminate food. The place must have enough space for food production or processing and handling, and for the fixtures, fittings and equipment used in that work. The design must allow staff, visitors and food to move in a way that prevents or manages risk.
