The obligation
Operators must have cleaning and sanitising procedures that are enough to enable food to be safe and suitable, and must clean and sanitise in line with those procedures.
In another set of provisions, sanitising procedures are needed only where, and to the extent that, sanitising is necessary for food to be safe and suitable. Facilities, equipment and the place of food business must be cleaned and, if applicable, sanitised in accordance with the procedures. Operators must also have pest control procedures that enable food to be safe and suitable, and must control pests in accordance with them.
