The obligation
Chapter 3 standards set food safety obligations for food businesses in Australia: safe food handling, food premises and equipment, and food safety programs (Standard 3.3.1 for certain sectors).
Standards 3.1.1, 3.2.1, 3.2.2, 3.2.2A and 3.2.3 require food businesses to implement food safety practices, maintain premises and equipment, manage food handlers' hygiene, and (for prescribed sectors under Std 3.2.2A) keep a food safety management statement or implement a food safety program. Standard 3.2.2A commenced 8 December 2023 for tier 1 businesses and has a phased implementation for tier 2. These standards apply in Australia; NZ has parallel obligations under its Food Act 2014.
